Ingredients:
           
Malt 1:
6 bs Briess Pilsen Malt
Malt 2:
3 lbs Weissheimer Munich Malt
Malt 3:
3 lbs Weerman Carared Malt
Malt 4:
1/2 lb Williams Wheat Malt

Other 1:
1/2 tsp Irish Moss

Hops 1:
3 oz German Spalt

Yeast:
Wyeast 1007 German Ale (large smack pack)

Process:
  • Bring 4 gallons water to boil
  • add water to grain in mash/lauter (5 gallon cooler with Listerman Phalse Bottom) - add cold water to bring temp to 122 degrees F. - Put cover on cooler and leave for 30 mins.
  • draw off 1 gallon wort and bring to a boil - add back to mash and stir in - adjust temp to 146 degrees F.  Put cover on cooler and leave for 30 mins.
  • draw off 1 gallon wort and bring to a boil - add back to mash and stir in - adjust temp to 158 degrees F.  Put cover on cooler and leave for 30 mins.
  • Sparge with additional 2 gals boiling water.
  • (at this point, I was interrupted for the day - the wort stood, unboiled, in the kettle overnight.)
  • Bring wort to a boil
  • After 30 minutes, add first hops and Irish Moss
  • After 20 minutes, Turn off heat and add second hops
  • *Let wort cool slightly in kettle for 10 minutes before adding final hops.
  • Cool wort and transfer to 5 gallon glass carboy - top up with water.
  • Pitch Yeast
