Barley Wine

Starting Gravity:

Ingredients:
           
Malt 1:
6 lbs Williams American Light malt extract
Malt 2:
6 lbs Williams English Light malt extract
Malt 3:
1 lb crushed amber crystal malt

Other 1:
1 lb oak chips

Hops 1:
3.5 oz Bullion
Alpha:
7.3
Time:
30 minutes
Hops 2:
1 oz English Fuggles
Alpha:
5.3
Time:
10 minutes

Yeast:
2 pkt Red Star champagne yeast

Process:
Boil oak chips in two gallons water, strain chips from water and place in bottom of sanitized plastic fermentor. Add crushed amber crystal in muslin bag to oak chip tea and bring water back to boil. Steep crystal for 30 minutes in hot water. Remove muslin bag and add all malt extract syrup. Bring water back to boil. Add hops according to schedule listed. At end of boil, add water to make 5 gallons. Cool and pitch yeast.
