6.25 # Briess Pale Malt
Fermentable 2:
1.5# Wheat Malt
Fermentable 3:
6.4 oz Vienna Malt
Fermentable 4:
3.5 oz Chocolate Malt 338L
Fermentable 5:
3# Howell Honey

Hops 1:
1 oz Northern Brewer
Alpha:
7.5%
Time:
30 minutes
Hops 2:
1 oz Target
Alpha:
8.8%
Time:
10 minutes
Hops 3:
2 oz Tettnanger
Alpha:
4.9%
Time:
at end of boil

Yeast:
1 pkt Edme dried yeast - rehydrated

Process:
  • Mashed grains in 2.5 gal water - held at 152F 60 mins
  • Added water after mash to 5 gallons - gravity=1.037
  • Boiled 60 minutes
  • Honey added after burners turned off
  • Added 1/2 gal water to bring volume back to 5 gallons
  • Cooled wort
  • Pitched yeast
