10.25 lb Maris Otter Malt
Fermentable 2:
.5 lb Wheat Malt
Fermentable 3:
3 lb Dark Michigan Maple Syrup
Fermentable 4:
3 lb Light Dry Malt Extract

Hops 1:
6 oz East Kent Goldings
Alpha:
5.5%
Time:
45 Minutes
Hops 2:
.75 oz East Kent Goldings
Alpha:
5.5%
Time:
10 Minutes
Hops 3:
2 oz East Kent Goldings
Alpha:
5.5%
Time:
after boil

Yeast:
3 pkts Safale Dry Ale Yeast #5-04 (34.5g) rehydrated during mash and boil
2 pkts Lalvin K1-V1116 Wine Yeast held in readiness in case there is a need tor rousing (I did not need this)

Process:
  • Mash Pale Ale and Wheat malts - single step infusion: 60 minutes at 150F
  • In brewpot, add syrup and dry malt extract - add water to 6 gallons
  • Check gravity - adjust as necessary: raise with dry malt extract or lower by removing a portion of wort
  • Boil 75 minutes
  • Add hops as scheduled above
  • Cool
  • Oxygenate (bottled O2 with stainless airstone) 2 minutes
  • Pitch yeast
Notes:

I made this partial mash for the simple reason that my 5 gallon mash tun (a converted water cooler) will not hold sufficient grain to do 5 gallons of barley wine for mashing. 

040404: racked - gravity is at 1.030 but volume dropped considerably due to the vigorous blow-by.  I estimate current volume at closer to 4 gallons than 5. This seems a little high to me or I would bottle it today, but I will let it sit in the secondary for a couple of weeks and check the gravity again to be on the safe side.

041004: bottled - gravity has not changed perceptibly in the past week.
