Pumpkin Ale 1999

pumpkin ale fit for a king

("here King!")

       

Ingredients:
           
Fermentable 1:
6.6 lbs Munton's Light Malt Extract Syrup
Fermentable 2:
1 lb Munton's Plain Extra Light Spray-Dried Malt Extract 2 oz Amarillo hops (7.3% Alpha acid)
Fermentable 3:
7 3/4 lbs fresh pumpkin
Fermentable 4:
3/4 cup blackstrap molasses

Flavoring 1:
4 tsp whole allspice
Flavoring 2:
5 tsp ground cinnamon
Flavoring 3:
2 1/2 tsp ground ginger
Flavoring 4:
1/2 tsp whole cloves

Other 1:
1/2 tsp irish moss

Hops 1:
Northern Brewer
Alpha:
7.8%
Time:
30 minutes

Yeast:
1 pkt Edme Active Dried Yeast (11.5g) prehydrated

Process:
  • Cut pumpkin into pieces approximately 1 1/2 inches square and trim off rind.
  • Crush whole spices
  • Roast pumpkin pieces under broiler until toasted
  • Place pumpkin pieces in 3 gallons cold water
  • Bring water to boil
  • Remove water from heat and add malt & molasses
  • At 30 minutes, add hops
  • At 45 minutes, add Irish Moss
  • At 60 minutes, remove wort from heat and add spices
  • Add water to make 5 gallons
  • Cool and pitch yeast
  • Notes:

    This year's pumpkin ale was the best yet - the largest difference was the addition of roasted fresh pumpkin and the result was a better-balanced ale. The Hops, spices and malt flavors all nicely cooperated to produce a flavor in which no part of the flavor dominated.
