Mr. Sweet Potato Head

Sweet Potato Beer

Ingredients:
           
Fermentable 1:
3 lbs pale malt
Fermentable 2:
2 lbs sweet potato

Other 1:
1 tsp irish moss
Other 2:
 1/3 corn sugar / priming

Hops 1:
1.5 oz East Kent Goldings pellets
Alpha:
5.3%
Time:
40 mins
Hops 2:
0.5 oz East Kent Goldings pellets
Alpha:
5.3%
Time:
20 mins

Yeast:
1 pkt (11g) Danstar "Nottingham" dried yeast

Process:
  • bake sweet potato @375F for 90 minutes
  • skin sweet potato
  • mash sweet potato into lumps
  • layer sweet potato with grain
  • mash @132F for 30 minutes
  • raise temp to 155F and hold for 30 minutes
  • sparge and collect wort in kettle
  • boil 1 hour, adding hops as indicated
  • cool, pitch yeast
Notes:

A similar beer was brewed at the same without sweet potato to provide a basis for comparison

Eight hours after pitching yeast, fermentation is apparant

It is apparant that the sweet potato added little if any fermentable sugar and very little flavor.  I consider this experiment a failure.
